Skin walkers in Northern Arizona and Northern New Mexico: Shape changing indians that often take the shape of wolves or ravens. Some really freaky stories there.
Jumpin Yuccy: a yucca cactus that blooms a center stalk anywhere from 6-12 feet high in a matter of seconds then shoots off all of its seeds hundreds of feet around.
CamelIce: Half camel half elk that came about when camels imported to the Arizona desert as work animals escaped and mated with indiginous elk.
Giant rooster: I think that photo has shown up here a time or two.
Rackabore: cross between a javalina and a mountain goat. Said to have legs shorter on either the right or left half of its body to make steep slope travel easier. (yeah, obvious problem there)
And of course the fan-favorite of boy scouts everywhere, Snipe.
Tur - it's an animal similar to cow, only bigger. It's extinct since 15th or 16th century but some people claim they are still living in this parts (my region is called Turopolje - Tur's field).

In New Zealand the most common reports have been of Moa sightings. There is also the Waitoreke which is described as otter-like and Maero which is a hairy homonid sort of like bigfoot.
