@ max: you're french so you are ought to spell it right, you have the accent on your keyboard; "à la" and not "a la". It's like english people spelling "where" instead of "were". (à= to/at ; a= to have)

when you say "à la mode" it's an expression that means "on fashion"/"fashionnable", mostly used for clothing. If you say "à la mode"+a place name it just means the way it's done there, it doesn't mean the way the fashion is in a particular city/country or whatever. The expression in that sense is mostly used for culinary products.
