Don't assassins get paid too, though? Also, I thought mercenaries were paid to just fight in general, like in a war or single large-scale battle, while assassins are only paid to kill a single target?

They can but not always. Like I don't think John Wilkes Booth or the guy who shot McKinley were paid to do so.
