why can't we chose to attack with only two or one armies like in the real risk board game?

No point, since you can choose to deploy however many troops you want ;)

Because you dont need move your armies after the attack, so attack with 3 dice is always better.

but isn't it true in risk, if you role 3 dice, you must move at least 3 armies forward? And if you were to only roll 2 dice, u only had to move 2 armies forward? Why dont we play that way here?

Conquer club isn't an exactly replica of RISK the board game. We all don't just play classic map, escalating, 1 fortification, sequential. Perhaps though like those, they could make it an map option of "minimum deployment" when you create the map, just like the other features.

Yeah it only moves one of your attacking units into the conquered country so it's to your benefit to attack with the most that you can.
The art of concentrating strength at one point, forcing a breakthrough, rolling up and securing the flanks on either side, and then penetrating like lightning deep into his rear, before the enemy has time to react.

Although technically if you only wanted to risk losing a maximum of one troop for some reason, it doesn't allow it. Not that I can see any advantage to that sort of idea.
