you might be able to make the choice according to which one you are more likely to own soon, for instance lets say on classic, you had red alaska, red s. europe, red madagascar, blue irkustk and green siam (im not sure if those territory cards are actually that color, but its just an example) if you owne NW Territory (in North America) but not Alaska, you would want to turn in the multi set, b/c then you can save the alaska card until you have the alaska territory and would get a bonus on it
Its kind of complicated and might not be worth it, but it works

Difference isn't very big, but two different cards are better than pair, so you should cash the trips and keep different cards.
The probability of buying a set is same, but mixed cards are better than mono-color (even in escalating), because of combining with opponent's cards (if you eliminate him).
If we ignore cases where you desperately want a +2 bonus on certain countries you own - you HAVE TO change trips and keep mixed cards. If you have a custom of keeping a pair, you'll sooner or later lose a won game, because of having only one set in 7 cards...

whether you have 2 of a kind or 2 different colours makes no difference at all in escalating. If you have 2 of the same, your next card has a 1 in 3 chance of being the same colour (giving you a set). If you have 2 different ones, you have the same 1 in 3 chance of getting the colour you need to make a cashing set. The difference lies entirely in which cards you own the terits for, or think you might own by the time you cash.

For example, is there is 14 cards of each colors in Classic, it means you will have only 12 chances out of 40 of getting the card you want.

You're talking about real table game. It's irrelevant here, because number of cards isn't limited. Probability is always 1/3, for every color...
And play "No cards, adjacent". Everything else is for pussies.
(Yes, yes, sometimes I play cards, etc...meow, meow).
Oh, and probably "No cards, adjacent, FOW" is where the real heavies will start hanging out..heheh.
I hate the Russian roulette total chance aspect of Escalating, so I guess this doesn't matter much to me. True, Flat Rate has total card chance as well, but not with the ridiculous come-from-nothing-to-win devastating effects. Just my 2 cents.
One of the big ones i have noticed has been if you have 5 cards. 2 blues and 3 greens. You cash in with the 3 greens leaving you 2 blues, it seems you will get 2 more greens in consecutive turns.
Also if you cash in with 3 reds it seems you tend to get a red card after your turn.
